Great Superfood Salad Using Seasonal Ingredients
Summer has finally arrived although temperatures are a little on the low side we do still have some of our great British favourites for June hitting the market. Check out my blog post on what’s in season for the month of June here.
As always I carefully plan my meals every week before I go grocery shopping, and I do love to eat with the seasons, fitting in as much tasty British produce as I can. Radishes are looking fantastic at my local farmers market, this week I picked up some gorgeous organic beauties for my Superfood Salad from Delicious magazine. I never noticed how pretty in colour they were until I washed all the dirt off, so bright and purplish in colour they looked so fantastic I just had to take a picture of them with my other ingredients.

I’m also really excited to be using my alfalfa sprouts which I have been growing for the first time this week. They are just amazing little things packed with nutrients and so fun to see them growing in a jar. They are super easy I really encourage even the most non green fingered of you to give it a go. All you need are some alfalfa seeds, a jar, some muslin cloth and an elastic band. They grow really fast and are ready to add to any salad, sandwich or whatever you like within a week.

Alfalfa Sprouts
This salad is super tasty and really good for you. The oily mackerel fish is loaded with Omega 3, alfalfa sprouts contain a concentrated amount of vitamins and minerals such as calcium, vitamin K and vitamin C, radishes for cancer fighting sulforaphane, indole-3 in addition to high levels of antioxidants and vitamin C and of course broccoli packed with folates, fiber, Vitamins A and C as well as complex B vitamins. The Delicious magazine recipe calls for sunflower seeds but I used pumpkin seeds instead as that’s what I had in the cupboard already. Of course all seeds all little wonder gems, tasty and mighty they pack punch with multiple vitamins, zinc, magnesium and protein.
